Chicory is a member of the aster family. It grows a root which can be up to 15 cm long and a rosette of leaves which rest on the soil.

Sunny location, loose, sufficiently moist soil.

It is possible to propagate chicory by sowing it and then forcing the roots.
Dig out the roots and leave on the bed for a few days and then trim off the foliage to about 5 cm.
Then push the roots closely together in a bucket or container filled with sand and put this in a dark, not too warm room with a temperature of between +10°C and 18°C.
The roots will then produce thick spindle-shaped "chicons" within the next three to four weeks.

Plants that are well suited for next year cultivation:

(not specified)

The following plants should not be planted in the following years:

How many years: Not to plant:
3 – 4 year(s) Chicory

Before the frost, you should dig chicory out, with its roots, remove the outer leaves, leaving just the heart and push into moist sand in the cellar or a cold frame.

Just before sowing, the soil should be loosened up quite deeply. Chicory needs light to germinate.

Pests: Aphids
Preventative measures: Spray with a garlic solution.
Control:
Soapy solution, stinging nettle swill. Spraying a film of rapeseed oil will suffocate larvae and aphids.

In summer, the ripening chicory leaves can be used as a salad.
Chicory is harvested when it has reached a diameter of about 3 to 6 cm.
When harvesting, the chicory roots are also dug out.

Keep chicory in the dark and at a constant temperature, wrapped in a moist cloth in the fridge. Like this, it will keep for about a week.

Chicory can be eaten raw or steamed or gently fried as a vegetable.
Chicory's tangy flavour can be made milder by adding fruit or juice.
Chicory is suitable for diabetics as it contains insulin.
