Beetroot is a biennial herbaceous plant.
There are red and colourless ("silver beets") through to light yellow ("golden beets") varieties.
In the first year the root and a rosette of leaves grow.
In the second year, a stalk will grow up to 1.5 m with a flower head.

 

Sunny to partial shade. Ideally the soil should be well drained with a small amount of humus.

 

Beetroot is propagated by seeds.

The young plants are sensitive to frost.
If young beetroot plants are exposed to frost they develop a tendency to run to seed.
This is why you should protect the young plants from frost or first sow in the spring and, if there's a late frost, cover with a fleece or with straw.

 

Beetroot is not very demanding.

  • Before sowing, soak the seeds for a few hours in rain water
  • Water sufficiently
Tips:
  • The small beetroot, so-called "baby beets" variety are particularly tender and do not need a lot of space.
  • Sow closer together and harvest the baby beets continuously.
  • To be able to harvest beetroot in autumn, you should first plant from early summer.

 

Beetroot is robust.
Pests: Voles.

 

You can first harvest them after about 5 to 6 weeks.
Lift the plants a bit in the morning and in the evening then pull them completely out of the ground.
Tip:
Harvest before the first frost at the latest.

 

Beetroot can be stored for a few weeks in a cool cellar with no problems.

 

Boil beetroot, peel it, then grate. Mix with a grated, sour apple.
Spice with salt, pepper, lemon, oil and honey.
Tip:
Before touching this very strongly coloured vegetable, rub a good amount of cooking oil into your hands.
